Eggs From "Well Treated" Hens

Changes in food consumption patterns and preference for organic products are forcing the egg industry to modify its production techniques.

The demand for "specialty eggs" from hens that are free range or fed with organic products and a tendency to consume only egg whites in order to avoid cholesterol is revolutionizing the industry, forcing producers to develop new forms of production. U.S. companies are investing millions of dollars in building poultry houses without cages and facilities to house thousands of organic egg layers.

In the United States, "the price of egg white increased more than three times in the last few months: one pound (454 grams), which in January 2013 cost 44 cents, was quoted in May at $1.44. What triggered this trend was the decision of the fast food chains to include only whites in their dishes containing eggs ... In April last year, McDonald's launched its sandwich McMuffin, made from egg whites, a proposal imitated by competitors Dunkin Donuts and Jack in The Box. "
