Food Service: Opportunities in the U.S.

This cannel represents 42% of total spending by U.S. consumers on food outside the home, making it the sixth country in the world with the highest per capita spending on food in this type of channel.

The study "Characterization of the foodservice channel in the United States", by Procomer Costa Rica, indicates that 33% of what Costa Rica exports to the U.S. market corresponds to the agrifood sector, where one of the possible marketing models - initial or later to participate in retail - may be the foodservice channel.

Marta Esquivel, Director of Trade Intelligence of PROCOMER, explained that "... This analysis of the foodservice channel allowed us to identify that its importance is associated with the size of the population and tourist centers, therefore the states with the largest number of establishments are: California (12%), Texas (9%), New York (8%) and Florida (7%). This information is very important for exporters to know where they have more opportunities and how to focus their efforts.

Esquivel added that "... no matter what type of establishment the exporter wishes to target, regulations must always be met to enter this channel, for example, mandatory access requirements such as FDA, USDA, etc., corporate requirements and channel-specific requirements such as nutritional aspects, packaging, etc."

The report explains that the identified marketing models are:

-Sales with own distribution: which entails assuming costs and administrative responsibilities of operating directly in the U.S.

-Sales with distributors: where large companies such as Sysco, US Foods and Performance Food Group Company are distinguished, that sometimes are difficult to access, given their preference to work with products of high demand, with large sales volumes and wide profit margins.

-Sales to clubs with or without membership: large or small clubs that import directly.
Strategic alliance with a distribution center: where the use of an outsourced warehouse is promoted, and an adequate digital marketing, tracking and account attention is carried out.
