Food: New Needs, More Opportunities

Because there are customers who demand gluten-free food, vegan food or dishes that adapt to the ketogenic diet, companies in Costa Rica can exploit new market niches.

The number of consumers who demand specialized food is rising in the Costa Rican market, so some restaurants have changed their menus to meet the demands of customers.

Nacion.com reviews that "... Kalú is not a new restaurant, it opened its doors in 2007. Although they already offered several options for people intolerant to gluten, they have new options for those who practice the keto (ketogenic) diet, concentrated in a new menu."

Camille Ratton, chef at the restaurant, said "... We always take into account different nutritional needs that people are having. There has been a growing public interest in recent months. In addition to gluten free we wanted to offer a supplement that would offer benefits for other populations such as diabetics and under the keto diet."

Businessmen dedicated to the elaboration of sausages, report that since they included in their portfolio, products that adapt to the keto diet, in which they exclude additives, sugars and carbohydrates in their manufacturing process, their sales have been better than projected.

According to reports from CentralAmericaData, in Costa Rica the population with the highest average income in the country shows interest in vegan, vegetarian and organic foods. When analyzing each segment, it can be seen that 10% of the population shows interest in vegan foods, and of this group of consumers, seven out of ten are between the ages of 21 and 45.
